...quinoa

My sister Arlene has turned me on to a little-known food (at least in podunk-ville). It's called quinoa. I had her pick some up for me in the bulk foods at Winco, but it's probably available at the local health food store as well. I looked online for some recipes but they were all too involved so I did my own thing. Here's the end result that I've been enjoying the last couple of days--quinoa, black beans, tomatoes, onion, cilantro, and garlic. I put a little lime juice and Tapatio chile on it for zing. Yum.

I LOVE that stuff! I don't do much meat at all, so I'm on the lookout for any other good protein sources. To your pictured dish, I'd add a little roasted corn. May be overkill for some, but I know what I like!

I agree with LN, adding corn would be good. I'm taking quinoa salad to Steve's for his 32nd! Can you believe that. Weren't we 32 just last week?

Tell my very first sweet baby boy nephew Happy Birthday from his auntie. How can he be 32???? Same salad you're bringing next weekend? I've been eating mine with corn tortilla chips. Does that count? haha
